gluten free double chocolate chip cookies








































































these vegan gluten free double chocolate chip
cookies
from the babycakes cookbook were a success.
not only edible,
they are delicious.
initially the cookies came out thicker than
those illustrated in the cookbook.
(rather than using a melon baller as directed,
rolling the dough into a ball and then pressing
resulted in a thinner and rounder cookie)

i was taken by his beauty
and the luminescence
of his feathers. no mrs. wood duck
in sight. isn't he a stunner?

gluten free pumpkin spice muffins






















































































in addition to trying vegan recipes, gluten free
options are of interest to me.
i have tried gluten free baking before
with unsatisfactory results.
things have changed for the better, especially
the availability of gluten free products in local
shops.
armed with a library copy of babycakes by
erin mckenna,
the ingredients were gathered, the recipe studied,
(i was wary of the use of 2 teaspoons of baking powder
and baking soda and 1 teaspoon of salt)
then the mixing and baking.
they looked beautiful.
then the tasting,
i couldn't eat the muffin, my lips burned from the sodium,
(i'd rather eat chips for a salt hit)
one taster commented on the foamy sensation while eating
the muffin.
the double chocolate chip cookies recipe looks promising!
